Raw Cashew Date Protein Bars

If you like having a little protein treat before a workout, try one of these healthy bars.  Store bought bars can be full of refined sugars and processed additives, so if you looking to follow a healthy lifestyle and control what types of ingredients you’re eating, make your own! The best part is, it tastes like a treat.  This recipe makes several bars, so I recommend freezing them for down the road. If refrigerated, they  have a 4-5 day life span.


  • 2 Cups
    Pitted medjool dates
  • 2 Cups
    Raw Cashew
  • 1/2 Cup
    Raw Almonds (blanched)
  • 3/4 Cups
    Chocolate Protein Powder (your choice) or Raw Cacao
  • 1/2 Cup
    Shredded Coconut (Raw/Natural)
  • 1 Teaspoon
    Almond Extract
  • 2 Tablespoons


  1. Combine the pitted dates, raw cashews, blanched almonds, and protein powder (or cacao powder) in a food processor or Blender.

  2. Process/Blend all ingredients until texture is coarse.

  3. Add shredded coconut, blend it a tiny bit, then add the almond extract and a the water. Blend till it creates a dry but moist dough consistency.

  4. Add the dough mixture into foil or baking sheet lined loaf tin and chill for an hour before serving. (I used a 5 x 10 glad container)

  5. After an hour, cut up the bars into small squares (1inch x 1 inch). And serve or save to snack on.
